Breakfast in 5mins or 15mins!

5 minute smoothie or 15 minute Eggs

Sometimes as a new parent time just in NOT on your side!

So here are 2 amazing recipes that will help your to start the day well and make sure that your body is getting all the nutrients and energy it needs to look after yourself and your beautiful new arrival!

First up our ‘NOT’ so green smoothie – ready in just 5 minutes and packed full of goodness it takes just 5 minutes to make and even less time to drink!

Method

Blend bananas and milk until smooth. Add spinach and blend on a high setting until most of the spinach has been broken down into small pieces. Add the frozen berries and blend until the smoothie mixture is all one color.Add the bran and sweetener; blend until desired consistency. Add ice cubes and blend again until smooth if you fancy it chilled.

15 minute super eggs

Delicious and packed full of essential vitamins and minerals try these eggs if you can find 15 minutes. Amazing for breakfast but to be honest we could eat this plate of goodness any time!

Method

Place a large pan over medium heat and add in the olive oil. Once oil heats, add in the beet noodles or cubes. Toss to coat in the oil and cover and cook 5-7 minutes or until beet noodles soften completely, uncovering occasionally to toss.For a scramble: Add the eggs and avocado into the pan with the beet noodles and scramble together. Once eggs are almost completely scrambled, add in the feta and finish scrambling. Serve. For an omelet: Set the beet noodles aside and place a medium saucepan over medium heat (or your preferred omelet pan) and coat with cooking spray. Add in the eggs and let set, pulling in the edges of the eggs with a spatula to let the egg disperse and cook almost fully. Once most of the eggs are set, season with salt and pepper and add in the beet noodles and avocado. Fold the omelet in half and press down to compress with the back of a spatula. Let cook another 2 minutes or until eggs are cooked through. Garnish with parsley and serve.
